Homemade Meatloaf Recipe
Doug loves comfort food, and in the middle of Colorado winter, what is better than homemade meatloaf on a snowy day post skiing at Keystone or Arapahoe Basin?
When you’re in the mood for comfort food, this meatloaf recipe is for you! It’s moist, simple, and super tasty! We smother it in our cracked pepper gravy and serve it with mashed potatoes and fresh veggies for a delicious home-cooked meal.
The meatloaf mix we use is 1/3 Veal, 1/3 Beef, and 1/3 Pork. If you can’t find a meatloaf mix in your grocery store, you could buy the three ground types of meat separately and mix them. You can also always just use beef, pork, or ground meat of your choice.
Meatloaf Ingredients
2lbs meatloaf mix
1 medium yellow onion (diced)
4 large cloves minced garlic
2 eggs
½ tsp thyme
1 tsp kosher salt
½ tsp black pepper
1 tsp Worcestershire sauce
½ Cup buttermilk
1 ½ cups panko bread crumbs
HOT TIP: Do not use regular bread crumbs as they are too fine. You should be able to find Panko crumbs in your grocery store
BBQ Sauce (for glaze)
One of our favorites is from Head Country— it’s tasty and delicious!
Ketchup (for glaze)
Recipe Instructions
1. Preheat your oven to 300 degrees. The convection oven is best.
2. Mix all ingredients (excluding the BBQ sauce and ketchup) in a large bowl. Only mix enough to incorporate all ingredients. DO NOT overmix; it will lead to tough meatloaf
3. Shape your meatloaf into a greased meatloaf or bread pan. If you don’t have a meatloaf pan, you can shape the mixture by hand. We dump the loaf out of the pan and bake it on a cookie sheet.
4. Mix equal parts of ketchup and BBQ sauce into a bowl and brush onto your meatloaf.
5. Bake for approximately 1 hour or until the internal temperature reaches 155 degrees.
6. Halfway through the baking process, take some time to brush more glaze onto your meatloaf.
7. Once done, glaze the meatloaf once more and loosely cover with aluminum foil and let rest for 15-20 minutes before eating.
