Doug’s Salsa Verde Recipe
Here it is, finally! Doug is sharing one of his favorite salsa recipes. You can add more heat if you’d like and all sorts of add-ons to suit your recipe or taste. Enjoy!
Ingredients:
1-3 Tomatillos
3-4 Anaheim chiles depending on size. Stem and cut in 1/2 crosswise
1 medium Onion skinned and cut in quarters
2-3 Jalapenos depending on size or heat tolerance, stemmed and cut in 1/2 crosswise
1/4 cup packed Cilantro
Water
Instructions
Place tomatillo, chiles, onion, and jalapeno in a medium pot and add enough water to cover it 2/3 of the way. Bring it to a boil.
Once boiling, cover and simmer, stirring occasionally for 30 to 40 minutes or until the tomatillo is falling apart.
Strain all but 1/3 of the liquid and return all items to the stove. Once again, bring it to a boil to reduce it down to 1/3 of that consistency. You are looking for a salsa-like consistency, without a ton of liquid but just enough to make a sauce.
Add the cilantro and all ingredients (except liquid) to a food processor and blend until smooth (usually about 30 seconds)
Pour into a bowl and add the reduced liquid and salt to taste.
Allow to cool and it’s ready to eat!
Other fun additions to this sauce are:
Roasted corn cut off the cob
Avocado
Pineapple, cantaloupe or watermelon
Which you can just blend with the other ingredients in the food processor!
Add it to:
Tacos
Breakfast items like eggs
Guacamole
On top of grilled or smoked meat
and anything else you can imagine!
