National BBQ Month Part 1: Doug's Korean BBQ Sauce

As many of you know, May is one of our favorite months of the year! It is National BBQ Month so this year we are celebrating with delicious bbq recipes and barbeque specials at the Cafe up until we close on May 12th! Here’s Doug’s tasty Korean BBQ sauce for a spin for our first recipe!

Korean BBQ Sauce

(yields 1 quart)

This sauce is good on EVERYTHING and it’s so easy to make! It will keep in the refrigerator for a couple of weeks so make a big batch to use for easy dinners. You could also easily cut this recipe in half for a smaller portion.

Here is a list of a few of our favorite applications:

  • Chicken Wings

  • Pork Chop with pineapple sesame salsa

  • Shrimp tacos

  • Glazed salmon

  • Baby back ribs

Ingredients:

  • 2 cups brown sugar

  • 2 cups water

  • ½ cup Hoisin sauce

  • ½ cup good quality bbq sauce (we use the hot & spicy sauce from Head Country)

  • ½ cup gochuchang (fermented chili paste) available at some grocery stores or asian markets

  • 2 Tbs. togarashi blend or Japanese 7 spice (we buy our togarashi blend and lot of other spices from The Spice Guy based out of Denver. www.thespiceguyco.com)

  • 3 Tbs white miso paste

  • 2 Tbs. sesame oil

  • 3 Tbs. rice vinegar

  • 3 Tbs. toasted sesame seeds (to toast your seeds place in a dry pan over med/high heat and toast for 3-4 minutes. Flip and turn the seeds frequently. They burn very easily so do not leave unattended.)

  • 1 Tbs. fish sauce

How to make the sauce:

  1. Boil the water in a large sauce pot.

  2. Add brown sugar and stir until sugar is dissolved. Turn off the heat.

  3. Add all remaining ingredients and mix well

  4. Turn on medium heat and simmer sauce for about 10 minutes to incorporate all ingredients.

  5. Put on top of your favorite protein and enjoy!
